A friend recently mentioned she was having roasted radishes for dinner. The recipe sounded interesting to me especially since it is low carb and vegan. So when I spotted the beautiful red vegetable with it’s bright green foliage in the market I decided to try them. Hubs and I are delighted at how wonderful they taste!

Low Carb Apple Pie Dessert
I've been following a Keto diet for several months and am happy with my current 28 pound loss. Where’d You Go Bernadette book review and a Pink Penguin
I’d finished all the paper backs in my stash and was looking for a quick e-read until my next book arrived from Amazon. I had a list on Goodreads and liked the bright cartoonish cover on Where’d You Go Bernadette plus it has a good rating and isn’t a long book. Written from the viewpoint of a teenager looking for her mother, author Maria Sample’s writing style and words captured my interest on the first page and kept it. Bonus: Sample was a TV fiction writer for Arrested Development, Mad About You and Ellen.

My grown grand is going to visit Ireland this summer and in my excitement for her I asked my fellow bloggers for some St. Patrick's day stuff. They delivered a wonderful variety of leprechuan crafts, recipes,and information to read that that I felt you could enjoy as much as I have. St. Patrick day is a delightful holiday with Irish roots that even those of us with only a smidgen of Irish blood can embrace. I'm making one of the Irish Soda Bread recipes this afternoon and the little grands are keen to make the Blushing Leprechaun Cookies.
Diet friendly luncheon menu and recipes
Winter is hard on the diet. I guess that’s why so many people make diet resolutions on New Year’s. I don’t do resolutions any more but many of my friends do. I try to stick to a healthy diet most of the time but especially when the weather starts warming up and I think about the summer wardrobe. That’s why I put together a calorie simple stress free light menu for a small lunch with friends. I’d planned to take advantage of a warmer winter day and setting up a party table outside but in Texas it can be 85° one day and 54° the next . My party lucked out on option number two [sad face]. Fortunately I used bright colors on an inside table set up to bring spring back to us.

I moved a dark red table from the entry to the serving area and strung some light colored tulle and ribbon for a banner backdrop. I used multi colored sandwich plates and yellow napkins. Easy Low Calorie Lunch Menu
- Caprice appetizers
- olives
- Baby carrots
- Tuna salad on deli Bulbous rolls
- Layered Raspberry gelatin dessert
Appetizers
The Caprice appetizers are the easiest ever. Simply use toothpicks to skewer a grape tomato and cube of mozzarella cheese inside a Basil leaf. Before serving, drizzle with Balsamic Vinaigrette. Add a few skewered olives for another delicious touch. A colorful vegetable like baby carrots will go well with this diet friendly plate too.Layered Raspberry Gelatin Dessert
A day before the lunch make some sugar free raspberry gelatin according to package instructions. Distribute the gelatin into individual dessert glasses and allow it to gel. When you’re ready to set them out add some lite whipped cream and fresh raspberries. If you have some fresh mint handy, put a little sprig on top.Tuna Salad Sandwiches
Gourmet Tuna Salad Sandwich

Ingredients (4 sandwiches)
- 2 packages, 12 oz. chunk lite tuna in water
- 1/3 cup lite mayonnaise with olive oil
- 1/4 cup sweet pickle relish
- 2 Tablespoons lemon juice
- 2 Tablespoons chopped nuts (Walnut or Pecan)
- 1 Tablespoon finely diced onion (I used white but use your favorite)
- 4 Bakery rolls of your choice (I love the Bolillos Rolls at Walmart)
- Spray can of olive oil or butter flavored oil
- 1 apple of your choice (my favorite is Honeycrisp)
- Fresh Spinach leaves
- Olives as garnish
Instructions
Combine all the ingredients down to the bread.
Slice the rolls lengthwise for sandwiches.
Spray the cut sides of the bread with olive oil or butter flavored oil. If you don't have the spray can type you can brush on some olive oil or melted butter.
You can toast the bread open face if you like.
Place several spinach leaves to make a bed on the bread.
Use a 1/3 cup measure to scoop a portion of tuna salad onto the spinach leaves.
Shake a little salt and course ground pepper on top.
Layer on a thin slice of apple.
Sprinkle with a few chopped nuts.
Spear 3 olives on a toothpick into the apple or on the top piece of roll.

Fried Peach Cobbler Fritters
One day I was commenting to my Aunt I love peaches and wishing I could work a trip to Weatherford Peach Festival in and the next day Brother In Law was bringing me a bucket of peaches! He was riding a horse by an unoccupied house and saw a small peach tree so loaded with peaches the branches were breaking off. He talked to the property manager and got permission to pick some peaches. He doesn’t cook or eat them raw, but knew I’d like them. How lucky am I? They smell wonderful and the pink skins are so pretty. This morning the little grands are here for breakfast so I mixed up a fritter recipe plus some delicious juicy ripe peaches for a delectable breakfast that tastes like a bite of fried peach cobbler. The best part is that they only take minutes to make.

luncheon Crab stuffed Cucumbers and Chicken Zucchini Sandwich Wraps
If you’d like to have a stress free luncheon for friends you may want to take a look at the menu and recipes used at this small gathering of friends. I started with a homemade crab stuffed cucumber appetizer then set up a buffet with my favorite Berry Walnut Romaine Salad, a deli purchased pasta salad, low calorie Chicken Tender Wraps, some chips and iced tea. It all went together in a couple of hours then I got to sit around listening to stories, laughing, and telling a few memories of my own.

Shamrock crust on a fruit cobbler
When my son was about 3 years old, we sat together in the back yard having a snack of fresh apricots. I showed him how to break it in half and then explained how God planned for more apricots by leaving a seed in the fruit to plant. Of course he asked if he could plant it, and off he went. He pushed the seed into a crack he found in the dirt next to the privacy fence. We were both delighted the next summer when it came up! My son is 30 now and that tree is a mature fruit bearer.

Pineapple Upside Down Cupcake
Boy Grand likes to help in the kitchen and he loves cupcakes so this week we decided to make an almost homemade cupcake version of pineapple upside down cake. We turned a packaged cake mix into an easy special treat with pineapple and cherries. We started with one of those small packaged confetti cake mixes just right for a dozen cupcakes. I chose the confetti mix because it seems to be more appealing to the kids that are tempted to eat only the icing. He approved.

Lemon Tarts made with Lemon Curd
The scenes in Downton Abbey episodes spend a lot of time drinking tea and eating little cakes, scones and biscuits. On season 5 episode 2 I noticed they often spread sauce or curd on the breads. Many years ago a very sweet English lady I worked with made Lemon Curd that she gave in jars as gifts. Since then I have thought fondly about it and wished I had asked for her recipe.
Downton Abbey Salmon Cakes with Lemon Butter
I know that not everyone is a fan of Downton Abbey, but I am. I watched the Season 5 premier last night with a cup of tea soaking up every detail of the period. I love the costumes, formal gatherings and pay close attention to tea time. There are usually only glimpses of the food being served but a little internet surfing pretty much tells you what is typically served during tea time. The meals are pretty simple and now I know how those British keep such a tiny stature! Today's post is dedicated to the Salmon cakes with lemon butter mentioned in the Downton Abbey kitchen on Episode 1.
Bake, Decorate, and Create for the Holiday
Christmas crafts, Christmas foods, Christmas decorations, Christmas traditions are near and dear to most of our hearts. It started when I was a kid hearing the season music, the smell of a fresh tree in the house and anticipating the Santa watch on Christmas Eve. My Dad was very excited about the holiday and went to great lengths to make it special for all of us. My grandmother made hot cocoa as we little kids waited anxiously and the uncles took turns guarding the door to the Christmas room increasing the excitement until everyone was present and ready. Crock Pot Chicken Pot Pie
Now that we are moved into the new address and have found a church home I am making my first pot luck lunch. It's a large serving crock pot casserole full of hearty chicken, veggies and creamy broth with leaf shaped crust. It's my version of Chicken Pot Pie for a crowd and it is definitely a comfort food that pleases the pallet.

Apricot Feta Bacon Summer Salad
On a warm summer day it’s nice to sit on the patio and enjoy a fresh summer salad for lunch. Use a variety of your favorite greens, add some fruit, cheese and maybe some protein and serve yourself some lite dressing on the side. The salad I am eating today is diabetic friendly and delicious. I’m using dried apricots today because I have a few left over from the scones I made. I like the light tartness and tenderness of the apricots. If I had some fresh strawberries I’d probably throw them in also! The measurements in the recipe are for one person but can easily be doubled, tripled, quadrupled. The proportions don’t need to be exact, you decide how much of each you like in your salad.

Cherry Cream Cheese Coffee Cake
Cheese cake or coffee cake… hmm, that IS a question. Why not both? I quickly checked several recipes and decided on this one from Pinterest. It is a Pin Win. I like the way the three elements come together for a not too sweet but just right dessert. I did add just a little milk to the batter because it was too dry to get into the pan successfully. About 1/4 cup. If I’d had more sour cream I would have done that instead. My spring form pan is a little smaller that the one used in the original recipe making it rise a bit taller than needed. I used a black cherry jam that was scrumptious and instead of her crumb topping I sprinkled on some slivered almonds. Got my Starbucks coffee (using my Verismo brewer) and thinking… do I dare have a second slice? Yes. Head over to Bunny’s Warm Oven for her recipe.
