A friend recently mentioned she was having roasted radishes for dinner. The recipe sounded interesting to me especially since it is low carb and vegan. So when I spotted the beautiful red vegetable with it’s bright green foliage in the market I decided to try them. Hubs and I are delighted at how wonderful they taste!

Baked Fried Apple Pie
This is another easy and simple apple dessert recipe that can be made for two or ten. It's also a recipe the kids will love making with you. So get the two main ingredients of biscuits and apples, plus butter and spices out and you can turn an apple into dessert in less than 30 minutes. Don't forget a big scoop of vanilla ice cream and maybe some caramel ice cream topping...

Party Menu + meatloaf slider recipe
I like football, don’t get me wrong, but I prefer watching the commercials and snacking during the game. Hubs is the same way, we do turn on the big games because, after all, the whole country is talking football and we need to be able to participate. Hubs and I chatted about this and decided we could come up with some acceptable party food for 2. Sounds funny doesn’t it?
Football Party Menu for Two :
- 2 Meatloaf sliders
- 2 twice baked potatoes
- 2 stuffed jalapeños
- 2 nine layer dips in a jar
- 2 individual packs of chips
- 2 chocolate dipped football strawberries
- 2 apple biscuit pies
- 2 root beer floats

Monkey Bread for Two
Yesterday was a beautiful 70° day and I took advantage of it getting out and about but another cold front blew in last night so I get to bake today. I like baking in cold weather for several reasons: warms the kitchen, smells wonderful and the food is comforting. Right now I am enjoying the cinnamon smell of a small batch of Monkey Bread. I cook for two most of the time so I adapted the recipe down for us. Here is my super simple recipe…

Mason Jar Raspberry Cheese Pie for Two
I was so pleased with the Strawberry Cobbler last week, that I decided to try using some frozen raspberries I had on hand and cutting the recipe to a serving for two. It turned out great.

Ingredients
- +2 oven proof single serving containers (I used small Mason jars)
- Melt 1 Tablespoon butter in each container. Roll the melted butter around the bottom and sides of the container.+
- 1/2 cup self rising flour
- 1/2 cup sugar
- 1/2 cup 2% milk
- 1-2 drops vanilla extract
- +Put half of the batter in each of the containers. (1/2 to 1/3 full)
- Add 1/4-1/2 cup raspberries on top of the batter.
- Put a heaping tablespoon of cream cheese on top of the fruit.
- Sprinkle a teaspoon of sugar on top of the cream cheese.
- Place containers on a cookie sheet and place in center of oven at 350 F. Bake 25-30 minutes until light brown.+

Clam chowder for two
I've spent the last 3 weeks with my mother helping her prepare for surgery. We've had some wonderful quality time together. With slightly cooler weather and only the two of us to prepare meals for most days, I adapted this recipe for us. It's delicious and heart healthy. Then I sat back and enjoyed watching her cheer and holler for the Dallas Mavericks...without much luck.
Clam Chowder for 2
- 2 slices turkey bacon, diced. Cook 3 minutes in a skillet sprayed with cooking oil until translucent
- add 1/4 medium onion finely diced and browned
- add 1 medium russet potato, finely diced
- 1/4 cup frozen corn kernels
- add 1 can (10 oz) chopped clams with juice
- add 1 cup water
Increase heat to high and bring to boil 20 minutes, until potato is soft.
Reduce heat to low, add:
- 1/2 cup fat free milk
- 1/2 cup fat free half and half
- a big pinch of black pepper and sea salt to taste.
Allow soup to simmer until slightly thickened. Makes about 2 1/2 cups.
