I like football, don’t get me wrong, but I prefer watching the commercials and snacking during the game. Hubs is the same way, we do turn on the big games because, after all, the whole country is talking football and we need to be able to participate. Hubs and I chatted about this and decided we could come up with some acceptable party food for 2. Sounds funny doesn’t it?
Football Party Menu for Two :
- 2 Meatloaf sliders
- 2 twice baked potatoes
- 2 stuffed jalapeños
- 2 nine layer dips in a jar
- 2 individual packs of chips
- 2 chocolate dipped football strawberries
- 2 apple biscuit pies
- 2 root beer floats
He made a big meatloaf Friday that we can package and freeze for later…later being Sunday’s game. Here is the meatloaf recipe that will become two little left over meatloaf sliders on our Football party for Two menu:
Meatloaf
- combine egg + milk + spices and stir in bread crumbs then add the meat
- 2 eggs, beaten
- 3/4 cup low fat milk
- 1/4 diced onion
- 1 teaspoon salt
- 1/2 teaspoon each: ground sage, basil or oregano
- 1/3 teaspoon pepper
- 2/3 cup dry bread crumbs
- 1.5 pounds lean ground meat
- Place mixture in a baking dish and bake 350° F one hour (160° internal temperature). Drain off fat.
- In a small bowl mix together:
- 1/4 cup ketchup
- 2 Tablespoons brown sugar
- 1 teaspoon dry mustard
- spread over meatloaf and continue baking for 10-15 more minutes. 8 servings.
To make the left over meatloaf sliders you need:
- Hawaiian King rolls
- left over meatloaf
- grilled onion slices
- cheese
We ate them just like that, but you can broil them in the oven just enough to melt the cheese. Butter and broil the top side of the bread at the same time.
