Monkey Bread for Two

Yesterday was a beautiful 70° day and I took advantage of it getting out and about but another cold front blew in last night so I get to bake today.  I like baking in cold weather for several reasons: warms the kitchen, smells wonderful and the food is comforting.  Right now I am enjoying the cinnamon smell of a small batch of Monkey Bread.  I cook for two most of the time so I adapted the recipe down for us.  Here is my super simple recipe…

Monkey Bread Sticky Buns

Monkey Bread also known as Sticky Buns

serves 2-4

  • 1 small (6 count) can layer biscuits
  • 3 Tablespoon melted butter
  • 1/4 cup brown sugar
  • 1/4 cup finely chopped nuts
  • 1/2 teaspoon ground cinnamon
    • Pre-heat oven 350° F.
    • As soon as you turn on the oven put the butter in your small baking dish and place it in the oven to melt.  If you don’t do that, melt the butter in the microwave.
    • In a small bowl stir together the sugar, nuts, cinnamon
    • Cut the biscuits into quarters, and roll the pieces around in the sugar/cinnamon. You can press them into the mixture a bit to help the coating stick.
    • Remove the baking dish from the oven and sprinkle half of the sugar/cinnamon/nuts in the melted butter.  Arrange the biscuits in the baking dish in the butter.  The pieces should be touching and stacked if your dish is small enough.  (I rolled the biscuit pieces in the butter a little as I arranged them) How cute would this be baked in a heart shaped pan for Valentines?
    • Sprinkle the rest of the sugar/cinnamon/nut mixture over the top of the biscuit pieces and maybe even a little more cinnamon.
    • Bake in the oven for 20-25 minutes.  Remove from the oven and immediately invert the bread onto a serving dish.  Get all the sticky gooeyness out of the pan onto the bread.  Best served warm, but be warned, you won’t be able to eat just one.
Confession:  as soon as the Monkey Bread came out of the oven, hubs appeared and we devoured the whole thing smiling and talking the whole time.
