I’ve got an easy Crock Pot Chili recipe that’s made with ground brisket and a man pleasin main dish for the big game day. We’ll be rooting for the home team while chowing down on a build your own Corn Chip Chili Pie. Using a crock pot allows the chili to slow cook and the flavors to marry. The added benefit is piping hot chili ready and waiting. There’s chocolate for dessert because it goes so well with chili and EVERYBODY likes chocolate in this house.
I personally love a lot of cheese and plenty of sour cream. Our son and his wife are big jalapeño lovers. What ever your choices you may suffer as I do from frequent heartburn. Making Crock Pot Chili
1. Two or three hours in advance of the party start the chili. I used course ground brisket I found in the meat section at Walmart but you can use ground beef or turkey. Brown the meat in a heavy skillet with the onion and bell pepper then drain the fat using a colander.2. Turn the crock pot on high. Spray your crock pot with oil then transfer the meat mixture into it.
3. Now dump the rest of the ingredients in and stir it together. Give it about 30 minutes to get good and hot then turn the cock pot down to a low simmer. It shouldn’t continue to bubble but retain a steamy temperature for the next few hours until the party. I love cooking it this way because of the ease. You could eat the chili right away but allowing it to simmer a couple of hours really brings out the flavors. Be sure to taste it before serving and add salt and black pepper if it needs it.

Bonus Tip: I use a folding table I purchased at Walmart for tail gate buffets. It is set up in the TV viewing room so the food and drinks are handy and no one misses a crucial football play. You will find it a lot less stressful if you use sturdy disposable dishes when it comes to clean up time. Crock Pot Brisket Chili

Ingredients (10-16)
- 2 lb ground meat
- 2 cups diced onion (about 1 large onion)
- 1 cup chopped bell pepper (about 1 large bell pepper)
- 5 Tablespoons chili powder
- 2 cloves minced garlic
- 1 teaspoon ground cumin
- 1 bay leaf
- 2-4 diced jalepeno, seeds removed
- 2 large cans fire roasted diced tomatoes (15 oz each)
- 2 Tablespoons tomato paste
- 1 1/2 cups water (add more if you like thinner broth)
- 1/2 teaspoon salt
- 1/4 teaspoon coarse black pepper
Instructions
Saute meat, onion, bell pepper 10 minutes till meat is light brown.
Drain fat.
Transfer meat mixture to pre heated crock pot. Turned on high 30 minutes.
Add remaining ingredients.
Stir to incorporate all ingredients.
After about 30 minutes the chili should be hot. Reduce crock pot temperature to simmer for about 2 hours.
Chili pie
Layer corn chips in bottom of bowl. Ladle on enough chili to cover the chips. Add favorite toppings such as grated cheese, jalepeno, sour cream. If you like it HOT dash on some hot sauce.
For a fun presentation, use single serving size bags of corn chips as the bowl. Just slit the side of the bag and add chili with toppings.
