Pumpkin flavored Stuffed Jalapeño Appetizer

We experienced a delightful field trip to a Pumpkin Patch near Floydada, TX.  It’s in a country setting among fields of pumpkins!  Pumpkin inspiration washed over me as we visited a large barn filled with pumpkins, gourds, some crafty items and edible treats.  The whole experience set me in a mood to get busy and create.  My son came up with a delicious pumpkin flavored stuffed jalapeño appetizer I submitted to #SoFabSeasons pumpkin themed group post with his permission and I’m sharing it with you.

He grilled his, but I’m using the oven because it’s blowing about 20 mph outside today.  It does that a lot out here in the Texas lower plains.  So, there’s your first option, inside or out-on the grill or in the oven, it’s up to you.


Take care when handling Jalapeno's 

 First thing you may want to do is put on some gloves to handle the jalapeños.   Jalapeño oils in the eyes or on the lips is kind of uncomfortable.  If you do experience jalapeño burn wash your hands with dish soap and hot water.  If the burn is on your lips or mouth drink milk.  You can even rub milk or rubbing alcohol on your skin to help alleviate the burn.  Don’t touch your eyes!  You can only use saline or eye wash there.  Remember to wash your hands with dish soap and water after handling jalapeños.

Prepare jalapeños with a quick wash then slice in half lengthwise.  I leave the stem attached because it makes a cute little handle.

See those little seeds and the white veins holding them in place?  Scrape it out with the sharp edge of a knife.  That’s where most of the heat is stored and frankly they burn like the devil if you don’t get rid of them.

Now fill the jalapeño cavity with pumpkin flavored cream cheese.  It’s popular in the grocery stores in the fall so it shouldn’t be hard to find.  If it is you can make a block of plain cream cheese flavored by adding a Tablespoon of pumpkin puree and about 1/8 teaspoon pumpkin seasoning.  Taste it and if you like a heavier flavor add a little more of both ingredients.

Wrap the stuffed jalapeño with a slice of bacon and secure with a toothpick.

Bake or grill about 30-35 minutes at 350 degrees until the bacon is done.

Pumpkin Spice Stuffed & Bacon Wrapped Jalepeno

Ingredients
  • 1 Jalepeno (2 halves)
  • 1-2 Tablespoons Pumpkin Spiced Cream Cheese
  • 1 Slice of thick cut bacon per jalepeno
Instructions
This recipe is for one jalepeno but easily adapts to about 6-10 jalepenos per carton of cream cheese.
Wear gloves when handling jalepenos.
Wash jalepeno.
Slice in half lengthwise.
Fill each half with cream cheese.
Wrap each stuffed jalepeno with half a slice of bacon and secure it with a toothpick.
Place on a baking sheet in the oven OR on some foil over a grill.
Bake or grill 350 degrees 35-40 minutes till bacon reaches desired crispness.
