Here's looking at you-Pasta

Hubs likes it when I test party recipes and this one turned out really well.  Using jumbo shells and a basic cheese stuffing, small meatballs and black olives I turned this dish into one that stares back!  I'm thinking we'll call them "Swamp Eyes".  What do you think?

Cook the jumbo shells according to package directions.  Be cautious not to over cook or they will fall apart.  While the shells are boiling put together the cheese filling.  Oh, and pre-heat the oven to 350 F.

Pour spaghetti sauce in the bottom of your baking dish (about 1 1/2 cups) to keep the shells from sticking to the dish.  Use a pastry bag or a plastic storage bag with the corner cut off to squeeze the cheese filling into the shells.  Carefully and gently press a fully cooked meatball into the center to resemble an eyeball.  Place it on top of the sauce in the baking dish.  It looks cute if you pair them up.  Kind of like the Brady Bunch intro scene.  Cover the dish with foil and bake 30 minutes at 350 F.

Remove from the oven and remove the foil.  Place a sliced black olive on each meatball for the eye's Iris.  Drizzle a little spaghetti sauce over the eyeballs and sprinkle some grated Parmesan cheese on top. Extra sauce can be served on the side.  Aren't they spooky?  I'm looking forward to serving them at our family party.


Cheese filling:

Use a whisk to mix together:

  • 15 oz carton of Ricotta
  • 2 Tablespoons grated Parmesan 
  • 1 1/2 cups grate Mozzarella
  • 2 eggs
  • 1 teaspoon pepper
  • 1 teaspoon salt
  • 1 Tablespoon Italian seasoning
If you are like me your pantry may be loaded with spice jars, and dad gum it, there's no Italian seasoning for this recipe.  Solution...search the Internet for a recipe.
Italian Seasoning:
  • 3 Tablespoons each:  Oregano, Basil, Marjoram
  • 2 Tablespoons each:  Thyme, Rosemary
I don't like to make little meatballs, so I buy them in the frozen food section of the grocery store.  OK, you can judge me... doesn't bother me.
