Frozen Fruit Smoothie For One

Most of the summer I sip iced tea while watching the grands do their thing around our tiny homestead.  They like iced tea too but sometimes it’s so hot and they are hungry for a frozen treat so I pull out my little bullet blender and make one smoothie at a time as requested.  The recipe is super simple and quick using four basic ingredients I always have on hand.  You can have one yourself in less than five minutes.

10 Things You Should Do Before Hitting the Roads This Summer

The kids are out of school for summer break and there are a list of things to do and places to drive on our summer activity list.  That means a lot more driving than usual so I pulled out my vehicle maintenance manual and made a check list to get our car ready to deliver us in optimal condition. I'll show you how easy it is to change the FRAM air filter right in your own garage.  I have also put together some “not so messy” snack ideas that can easily be packed for day trips plus a DIY travel activity kit to minimize that question kids love to ask – “ARE WE THERE YET?”

Diet friendly quick Bolillios pizza

It’s time to take a little break from the morning gardening and have some lunch.  I’m throwing together a quick 15 minute meal from my “short cut cooking” menus that is diabetic friendly, low calorie, and economical too.  I ate one Bolilillios pizza with a Romaine salad +raspberry vinaigrette dressing for under 200 calories, 22 carbs, and under $1.25 a serving-including the salad.  How great is that!  I bet my grands would would like this for an after school snack.

Cranberry Orange Amaretto Scones

I made my first scones in honor of St. Patty’s Day.  I researched several recipes and read up on historic Irish foods.  There was some debate on whether scones came from the Irish, Scottish or England but it doesn’t matter because they did make something like it on griddles.  They remind me of something between a sweetened biscuit that doesn’t rise much that are delicious.

Baked Fried Pickle with Ranch dip

I feel like the last Texan alive that had not eaten fried pickles.  But something about the thought of fried dill pickle has deterred me since I first heard of them at the State Fair several years ago.  The recipes have floated by me on Pinterest and on numerous cooking shows until today.  I’ve been trying to give my mom a varied menu and today after a short discussion about fried pickles I gave in.  Why did I ever wait?

Apricot Burrito

Sometimes you just want something sweet but you don't want to make a big mess in the kitchen or wait too long.  Here is one of my favorite quick, easy recipes that can be made for one or for more in less that 30 minutes.  I made four this time.  Two for me and two for hubs.
super quick and easy fresh apricot burrito for dessert or snack

Warm a few flour tortilla's in the microwave 20 seconds
Place heaping tablespoon full of fruit preserves on one side of one tortilla.
Roll tightly.
Fry in hot grease until lightly browned on both sides.
You can use a toothpick to hold the roll tight if you need to.
  Dust with powdered sugar.
Cool a few minutes and devour!

Ingredients:
Flour tortillas
Fruit preserves (I like chunks of fruit in mine)
Our favorite is Apricot Preserves, but you can use your favorite fruit.
Powdered sugar
Vegetable oil to fry them in.
