Before game time I bought a Marketside rotisserie chicken, cole slaw, bakery rolls, chips, some dips, coke, and vanilla ice cream all in a quick trip to Wal-Mart. I even scored the chicken on sale! By the time I got home the chicken was cool enough to get started with this effortless meal recipe in plenty of time to set up and start celebrating before the game kick off. You can easily pick up the fully cooked rotisserie chickens at Walmart and create a meal around it quickly, especially for busy parents on-the-go AND you can also easily pick up the Marketside pizzas and grill or bake them as you are getting back into the back-to-school routine. I pulled the meat off the bone and set it aside while I put a 1/2 stick of butter in the microwave to melt then sliced my favorite onion poppy ciabatta bakery rolls in half and lay them out open faced. I slathered on some melted butter and toasted them in the oven for a few minutes. It’s kind of hard not to sample a buttery slice when it comes out of the oven. But I resist, this time.
Next, I layer on a big spoon full of the cole slaw and a generous serving of shredded rotisserie chicken. I love how the slaw gives it moisture while saving me the step of adding condiments and gives the sandwiches a gourmet look. After all, the first thing hungry participants notice is how delicious the food looks and believe me this group is hungry by the time we arrive at the football field. I tie up each sandwich in wax paper like a little gift and pack them into a container for transport.
The Coca Cola® has been chilling in an ice chest where I put the ice cream just before we leave. It helps to wrap the ice cream in several layers of heavy foil and slip it into an insulated bag so it is not completely melted when we get there. I picked up my insulated bag at Wal-Mart. When the picnic basket is all packed we head out to the field where we set out our tailgate picnic. You should see the faces when they see how yummy everything looks and the coke floats…well, they are just a perfect finishing touch.

Rotisserie Chicken and Cole Slaw Sliders

Ingredients (serves 4-6)
- Bakery Onion Poppy Ciabatta Rolls
- Marketside Rotisserie Chicken
- Marketside Cole Slaw
- butter, melted
- optional salt and pepper
Instructions
These are the easiest gourmet sandwiches you will ever make.
Simply make a quick stop at a deli, I bought my ingredients at Walmart Marketside.
Open the bakery rolls and slather with melted butter.
Toast for 2-3 minutes under the broiler.
Pull the rotisserie chicken off the bones and discard the skin.
Heap a couple spoon fulls of coleslaw onto a toasted roll - be generous.
Load on some shredded chicken on top of the slaw.
Add a little course ground pepper and salt if you want but the chicken is already seasoned, so taste it first.
Top with the other half of the roll.
I wasn't kidding, the easiest dinner sandwich ever! Now tear a square of wax paper and place the sandwich on it like a diamond in the middle. Fold in the sides then the back and front. Use twine to tie a nice little bow around it. The wax paper keeps the sandwich moist but doesn't promote sogginess. The cute little bow holds it closed and turns each serving into a delicious gift.
Serve with chips, deli dips and a dill pickle spear. Last, but not least make a frosty Coke float to quench the thirst and fix a sweet tooth at the same time.
