Whoo hooo likes eggs?



Why have a plain boiled egg or a plain deviled egg when there is an alternative?  I've been practicing healthy food choices for a Halloween party, so when hubs mentioned deviled eggs, the easiest (and cheapest) finger food ever, I gave them a make over.
Using a simple recipe that wouldn't fight with the flavors in the decorations, little owls emerged.

Put eggs in a pan and cover with cold water.  Put the pan on a medium high heat.  When the water comes to a full rolling boil, put on a lid and turn off the heat.  Wait 20 minutes then drain the water and let the eggs cool.

Peel the eggs and cut in half long ways.
Gently remove the egg yolk to a small bowl.  Use a fork to mash the yolk as fine as possible.
For every one egg, add about a 1/2-1 teaspoon miracle whip salad dressing, 1/4 teaspoon Dijon mustard, salt & pepper.
Mix it really smooth. then add about 1/4 teaspoon finely chopped sweet pickles.  Not too many pickles, you want the egg filling pretty smooth.
Refill the egg whites with the filling.
Slice olives for the eyes and a small sweet pickle end for the nose.
