Oh joy! It’s National Chocolate Cake day! Not that I need an excuse to eat chocolate cake, but I’ll take it anyway. [giggling happily] I chose an easy and quick recipe that is baked in a cast iron skillet. Big girl grand dropped by for a visit between classes right in time to test it out. She and her granddad at two pieces. I’m taking that to mean it is a winner.
Chocolate Hazelnut Skillet Cake
Bring to a boil in a cast iron skillet - 1/4 Cup butter
- 1/4 Cup vegetable oil
- 2 Tablespoons cocoa powder
- 1/2 Cup water
- Remove it from the heat and add dry ingredients. Stir in gently:
- 1 Cup all purpose flour
- 1/2 teaspoon baking soda
- 1 Cup sugar
- Stir in remaining ingredients:
- 1/4 Cup buttermilk (can substitute regular milk with a few drops of lemon juice)
- 1 egg
- 1/2 teaspoon Hazelnut flavoring (you can substitute vanilla if you’re not a hazelnut fan)
Chocolate Hazelnut Icing
Bring to boil:- 1/4 Cup butter
- 2 Tablespoons cocoa
- 4 Tablespoons milk
- Remove from heat and add:
- 2 1/4 cups powdered sugar
- 1/4 teaspoon Hazelnut flavoring (or vanilla)
- optional: 1/2 cup shopped nuts
