“Almost Home Made” Baklava Mini Pies


I came across a wonderful recipe in my old cardboard box this week while we were iced in for 4 days.  It looked simple enough, I had the ingredients and one of my favorite desserts is Baklava.  As a matter of fact there was a former co-worker that made it on my birthday the years we worked together.  I miss her and her Baklava.   I suppose that is another factor in choosing this recipe to adapt to my own style and needs.  This is another one of those almost home made versions that even my non baking friends will be able to whip together and have others sing their praises.  Have at it girls, I won’t tell how easy it is!

You need a purchased pie crust that you can find next to the can biscuits in the market (2 rounds) or make your own.

Filling Ingredients:
  • 2 Tablespoons honey
  • 1 tea
  • spoon ground cinnamon
  • 1 teaspoon lemon juice
  • 1 cup finely chopped nuts (walnuts or pecans)
  • 1/3 cup sugar
Mini_Baklava_pies

    • Pre heat oven 375° F
    • Lay out the dough so it will soften enough to easily roll out flat.
    • In a small bowl stir together the filling ingredients.  It will be kind of crumbly like strudel.
    • In another small bowl or cup make a wash with a Tablespoon of honey and a teaspoon of water.
    • Working with one crust at a time and a biscuit cutter, cut little dough circles and place half of them on an ungreased cookie sheet 1-2” apart.
    • Put a rounded Tablespoon of the filling in the center of each dough round (on the cookie sheet).
    • Take a second round that does not have filling on it and brush it with the honey/water mixture. 
    • place it wet side down on top of the filling to make a little sandwich.
    • Use a fork to seal the edges all around.  Prick the top center with the fork tines to allow steam to escape.
    • Brush the tops with the honey/water mixture and sprinkle a little cinnamon with sugar on top too.
    • Bake 18-20 minutes till the crust is honey brown and done.I really like the small finger size pies that I plan to serve at our New Years Eve party.
