At the beginning of the week hubs brought home a big package of large boneless skinless chicken breast. They are so plump that one is large enough for both of us. I separated them into packs of two in freezer zip lock bags and froze some. Two of them I boiled with salt, pepper and dried Rosemary. This is the recipe I made today, and it turned out so well I promised hubs to make it again before long. The other breast will be chicken pot pie tomorrow.
Bundled up Chicken
Mix together in a small bowl and set to side:1 large boneless skinless chicken breast, (or 2 smaller breasts) cooked and shredded
1 8 oz package cream cheese, softened in microwave 20 seconds
1 generous teaspoon lemon pepper
Separate and lay out 8 refrigerated crescent rolls (from the dairy isle)
Place 2 Tablespoons of chicken mixture on the large end of the triangle.
Sprinkle a pinch of cilantro on each chicken mound.
Roll up the crescents and fold over the corners to enclose the mixture. Press edges closed.
Roll each bundle in melted butter (3/4 stick) then in fine bread crumbs (1 cup)
Place breaded bundles on an oiled baking dish.
Bake 375 F for 20 minutes
While they bake, mix and heat 1 can cream of chicken with 1/2 can milk and a big pinch of pepper.
Serve bundles with cream of chicken sauce ladled on top.
Now that's done and we're settled down to watch a Sandra Bullock movie. I just love Sandra Bullock.
