Toddler day 7 healthy cookies

Another beautiful day in Texas, only 82 F. at noon!  Great Grand is feeling active today too.  We started the morning with baking some toddler approved healthier cookies.  I adapted a cowboy cookie recipe to sneak in some additional nutrients (dried fruit and grated carrots).  The 2 year old dumped the ingredients in the bowl and stirred as best he could.  He sampled the dried fruits and peanut butter bits nodding enthusiatically that they were "DELICIOUS".  The carrots...not so much.

Cowboy Toddler Day Cookies

Cream together with a mixer:
1/4 cup softened butter
1/4 cup peanut butter
1/2 cup sugar
1/2 cup brown sugar
Add:
1/2 teaspoon baking power
1/4 teaspoon baking soda
1 egg
1 teaspoon vanilla
1 1/4 Cup flour
1 cup rolled oats
1/2 cup mixed raisins, dried cherries, dried cranberries, coconut
1/2 cup fresh shredded carrots
1/2 cup Reese's mini peanut butter bits

Drop rounded teaspoons of the dough on an ungreased cookie sheet about an inch apart and smash a little flat with your hand.  Bake 350 F for 10-12 minutes.  Cool.

His other favorite activity of the day was finding a game he could play in the game closet.  A set of Mexican Train Dominoes.  We matched the colors, stacked towers, matched trains to color dominoes, made long lines, and counted dots.
