Cranberry Pumpkin Cookies + pumpkin pie spice and allspice recipes

Holiday inspired cranberry pumpkin cookies
I started out with Ranger cookies in mind but was missing some key ingredients so plan B…check the fridge for what I DO have.  There sits a half can of pumpkin puree.  So, here goes… basic cookie recipe substituting pumpkin for the liquid, changing up the spices and using some dried cranberries.  Dang, that worked pretty well I will have to make some for the Thanksgiving dessert table.  So, now I can share. ♥

Cranberry Pumpkin Cookies
Pre heat oven 350°
Beat together (I used a mixer):
  1. 1/2 Cup softened/room temp butter
  2. 1 1/2 Cup packed brown sugar
  3. 1/2 teaspoon baking soda
  4. 1/4 teaspoon salt
  5. 1/2 teaspoon pumpkin pie spice (recipe below)
  6. 1 egg
  7. 1 teaspoon vanilla
  8. 3/4 Cup pumpkin puree
  9. 2 1/2 cups flour (add in slowly, fold in the last 1/2 cup)
  10. Fold in 1/2 Cup dried cranberries
  11. 1/4 cup sunflower seeds (optional)
  12. Cream cheese icing (optional)

Drop by slightly rounded Tablespoons 2 inches apart onto an ungreased cookie sheet.  Pat them down just a little bit.  Bake 10-12 minutes.  Cool on a wire rack.  If you’re feeling extra special ice with a dollop of cream cheese frosting that is flavored with a little cinnamon sugar.

My mom will be happy that I’m bringing her some of these yummy cookies.  They were easy to make and only took 20 minutes to prepare.  Please let me know if you make them and how you like them.  Do you ever start with one thing in mind and end up with something quite different, but delicious?
