Apricot Feta Bacon Summer Salad

On a warm summer day it’s nice to sit on the patio and enjoy a fresh summer salad for lunch.  Use a variety of your favorite greens, add some fruit, cheese and maybe some protein and serve yourself some lite dressing on the side.  The salad I am eating today is diabetic friendly and delicious.  I’m using dried apricots today because I have a few left over from the scones I made.  I like the light tartness and tenderness of the apricots.  If I had some fresh strawberries I’d probably throw them in also!  The measurements in the recipe are for one person but can easily be doubled, tripled, quadrupled.  The proportions don’t need to be exact, you decide how much of each you like in your salad.

I have learned my friends like a light and easy salad during the hot months too so experiment.  Make the recipe larger and serve it with some sweet southern iced tea.  Meals don't have to be heavy to be satisfying.  Heck, I used pre-cut ready to eat salad greens from the market! 

Apricot Feta Bacon Salad
  • 2 Cups mixed salad greens
  • 2 dried apricots, minced
  • 1/2 Tablespoon Feta cheese, crumbled
  • 1/2 slice bacon, cooked and chopped
  • dressing of choice
Cut a 1/2 slice of bacon in small pieces and cook in a skillet till crispy.  Tear salad greens in small bite size pieces and stack up on a salad plate.  Sprinkle the warm bacon and a bit of the rendered fat over the greens.  Add the minced apricots and Feta to the top.  You can drizzle on a lite dressing or serve it on the side.  Try a bacon or fruit vinaigrette.
