Chocolate Hazelnut Skillet Cake

Oh joy! It’s National Chocolate Cake day!  Not that I need an excuse to eat chocolate cake, but I’ll take it anyway. [giggling happily]  I chose an easy and quick recipe that is baked  in a cast iron skillet.  Big girl grand dropped by for a visit between classes right in time to test it out.  She and her granddad at two pieces.  I’m taking that to mean it is a winner.

Chocolate Hazelnut Skillet Cake
Bring to a boil in a cast iron skillet
  • 1/4 Cup butter
  • 1/4 Cup vegetable oil
  • 2 Tablespoons cocoa powder
  • 1/2 Cup water
    • Remove it from the heat and add dry ingredients. Stir in gently:
  • 1 Cup all purpose flour
  • 1/2 teaspoon baking soda
  • 1 Cup sugar
    • Stir in remaining ingredients:
  • 1/4 Cup buttermilk (can substitute regular milk with a few drops of lemon juice)
  • 1 egg
  • 1/2 teaspoon Hazelnut flavoring (you can substitute vanilla if you’re not a hazelnut fan)
Bake at 350° F for 25 minutes.  While the cake cools in the pan, make the icing in a small pot.

Chocolate Hazelnut Icing
Bring to boil:
  • 1/4 Cup butter
  • 2 Tablespoons cocoa
  • 4 Tablespoons milk
    • Remove from heat and add:
  • 2 1/4 cups powdered sugar
  • 1/4 teaspoon Hazelnut flavoring (or vanilla)
  • optional:  1/2 cup shopped nuts
    • Pour warm icing over skillet cake.
